Crawfish Pie

1/4 c. cooking oil
1/2 c. onion, chopped
1/4 c. celery, chopped
1 lb. shelled crawfish tails
1/2 Tbsp. crawfish fat (optional)
3/4 c. water
2 Tbsp. cornstarch
5 green onions, chopped
2 Tbsp. parsley
cayenne pepper to taste
salt to taste
1 unbaked pie shell

Saute onion and celery in oil; add tails and fat. Cook 20 minutes. Add cornstarch, dissolved in cool water; cook until thick. Add green onions, parsley and seasonings; mix well. Pour into pie shell and bake at 350 degrees for 30 minutes. Let stand 5 minutes before cutting.
