Skimpy's Cajun Red Beans and Rice

4 cans Green Giant Red Beans
1 large Onion
1 large Bell Pepper
1 lb. Smoked Sausage
1 lb. Smoked Ham
1 tsp. Oregano
2 Tbsp. Tony Chachere's Seasoning
1 can Cajun Stewed Tomatoes
1 can Ro-Tel Tomatoes
2 or 3 Bay Leaves

In a large iron skillet saute sliced Smoked Sausage, cubed Smoked Ham, sliced Onion, and sliced Bell Pepper. In a large stock pot add the Red Beans. After the Onions turn clear add this mixture to Red Beans. Now add Stewed Tomatoes, Ro-Tel Tomatoes, Oregano, and Tony's Seasoning. Bring to boil and reduce to low simmering tempature. Cook about 1 hour; then add Bay Leaves and cook 30 more minutes. Serve over white rice. The guys at my work beg me to cook this all the time. It's a cheap and quick recipe. It can feed alot of people.
