The following menu is the perfect meal for a hot summer day!


Pineapple Cheese Ball

  • 2 8 oz. packages, cream cheese, softened
  • 2 green onions minced, including tops
  • 1 8 oz. can crushed pineapple, drained
  • 2 cups chopped pecans
  • 1/4 cup bell pepper
  • 1/2 tsp. seasoned salt
  • Mix all ingredients, except 1 cup of the chopped pecans, use remaining cup to roll the cheese ball with. Chill and serve may be frozen.




    The following recipe is based on one that was served at the Richs' Magnolia Tea Room. Sadly to say the Richs tea rooms are now a element of our past. A part of a much gentler Atlanta.


    Frozen Fruit Salad

  • 1 (8-ounce) package cream cheese, softened
  • 1/2 cup of powdered sugar
  • 1/2 cup of mayonnaise
  • 2 tsp vanilla
  • 1/2 cup maraschino cherries, drained
  • 1 (26 -ounce) can of fruit cocktail, drained
  • 1 (13-ounce) can crushed pineapple, drained
  • 2 cups miniature marshmallows
  • 1/2 cup whipping cream, whipped
  • In a large mixing bowl mix cream cheese, sugar and mayonnaise. Add vanilla, and blend. Gently blend in the fruit and marshmallows. Fold in whipped cream. Pour mixture into paper lined muffin tins and freeze. Serve with additional whipped cream.
    Lambie's Chicken Salad

  • 2 large cans of Tyson White Chunk Chicken
  • 2 Tbls each onion, celery, tart apple, sliced almonds
  • Mayonnaise to taste, I use 2-4 Tbls
  • Mix all ingredients together and chill.


    English Pea Salad

  • 2 (17-ounce) cans English peas, drained
  • 2 hard boiled eggs, chopped
  • 1 cup sharp cheddar cheese, grated
  • 1 small red onion, finely chopped
  • 1/2 cup chopped pecans
  • 1/2 cup mayonnaise
  • Salt and pepper to taste
  • Mix all ingredients together and chill.


    Old Fashioned Lemonade

  • 1 cup sugar
  • 5 cups cold water
  • 1 cup fresh squeezed lemon juice
  • Dissolve sugar in 1 cup of water, add lemon juice and remaining water. Garnish with lemon slices and sprigs of fresh mint.


    Line luncheon plates with green or red leaf lettuce. Place frozen salad on plates, using a large ice cream scoop place a scoop of chicken salad and a scoop of pea salad on each plate. Garnish with fresh chives or parsley.

    Serve with ginger cookies for a perfect ending. Enjoy!
