This recipe is for a friend that lives in the backwoods of Kentucky, well here it is Jack, Enjoy!
Possum and Sweet Taters
Peel the baking potato and place it inside the possum. Place the possum in a large dutch oven, and cover with cold water. Boil gently, uncovered, for about 30 minutes. Pour off broth and add fresh water. Return to a boil and cook slowly, partially covered, until tender when pierced with a fork, but not falling off the bone. Remove the possum to a roasting pan and sprinkle with salt and the pepper.
Blend the flour with cold water until smooth. Combine the flour mixture with enough of the hot broth to make 2 cups of gravy. Arrange the sweet potatoes around the possum. Pour the gravy over the meat and potatoes. Cover and bake at 375 degrees until the potatoes and nearly done, about 20 minutes. Uncover and bake, basting often, until the meat is brown and the potatoes are soft, about 40 minutes.
Maggie's Chocolate Cake
Sift together sugar and flour, set aside. Melt oleo in a 2 quart sauce pan. Add cocoa, water and shortening, bring mixture to a boil then pour over sugar and flour, mix well. Add eggs, buttermilk, soda, and vanilla, mix well.
Bake in a greased and floured 9x13 inch pan for 35 minutes, at 350 degrees. (Batter will be thin)
Cocoa Frosting:
1 stick oleo, 3 Tbls cocoa, and 8 Tbls milk, bring to a boil. Remove from heat and add 1 box powdered sugar, 1 tsp vanilla and 1 cup of nuts (optional). Pour over cooled cake.
Spinach Lasagna
Mix ricotta cheese, 1 cup mozzarella cheese, egg, spinach, oregano, salt and pepper together.
In a greased 9x13 inch pan layer sauce, noodles, cheese mixture. Repeat ending with mozzarella cheese.
Pour 1 cup of water around the edge. Cover pan loosely with aluminum foil.
Bake at 350 degrees for 1 hour. Let stand for 15 minutes before cutting.
Lasagna may be assembled ahead of time and refrigerated until ready to bake.

Mix all ingredients together and refrigerate over night. Serve on crackers.

My kids love this and will only eat it on Club Crackers.
