* 4 Tablespoons extra virgin olive oil (use more if needed) * 1 large onion - chopped * 6 cloves fresh garlic - minced * 1/2 cup sun dried tomatoes in olive oil - cut up into small pieces (cut up first to get your measure) * 1 Tablespoon fresh basil - chopped PLUS 1 teaspoon dried basil (may substitute 2 teaspoons dried for basil ingredient if fresh is not available) * 2 - 28 oz. cans peeled tomatoes (I use Muir Glen) * 1 Tablespoon sugar (you may have to use more if tomatoes are tart) * Salt and Pepper to taste
Instructions
* Saute onion, garlic, sun dried tomatoes, and basil in olive oil over medium heat until onions are softened and turn light brown. * Add canned tomatoes and salt and pepper to sauteed ingredients. Turn off heat. * Using hand blender, blend tomatoes and other ingredients in the pot until sauce is consistency you desire. (If you don't have a hand or stick blender, you could transfer ingredients to your regular blender.) * Simmer over medium heat for about 45 minutes to an hour stirring often. * Use over your favorite pasta, polenta, etc. * Enjoy
