In our house, Salsa is a regular item on the menu!
Even the finicky eater, Jason, loves it!
So, here are a few of my favorite recipes
for homemade salsa!

First, a little info about peppers.
I use the following scale to determine my pepper choise.
I also wear gloves when I
handle all these peppers,
except Ancho and Sweet Bell.

Kit25Homestyle Salsa

1/2 tsp salt
1 onion, chopped
2 cloves garlic, minced
1 green (sweet bell) pepper, diced
3-4 tomatoes, pealed and diced
1/2 cup cilantro, chopped
1 tbsp oil
1/2 cup beer
1 tsp ground cumin
2 sweet/hot peppers, finely chopped ( I use jalapeno's usually)
additional hot peppers or pepper sauce, to taste

In medium saucepan, saute' onion in oil for 2 minutes
or until slightly softened.
Add remaining ingredients except cilantro.
Allow to cool for 30 minutes
add cilantro and a squeeze of fresh
lime juice.
Serve chilled or at room temperature.

Kit49Green Tomato Salsa

1 green tomato or 4 tomatillas
1 small onion, finely chopped
1 hot pepper, minced
1 tbsp balsamic vinegar
1/4 cup flat-leafed parsley
2 tsp fresh ginger root, finely minced
1 tsp sesame oil
1 tsp sugar
1/4 tsp salt
1 sweet pepper, chopped
1 red tomato

Cut tomatos into wedges and slice crosswise into thin slices.
The tomatillas nees to be cooked for best flavor.
Boil them for 5 minutes, or roast them
husk on, in a medium-hot frying pan,
turning often, until the flesh is tender.
(about 10 minutes)
Mix with other ingredients and chill for
at least 1 hour. Serve with fish, chicken or noodles.

Another PepperNo-cook Salsa

2 sweet bell peppers
1/2 pound hot peppers
1 lb onions
1 lb tomatoes
1/4 tsp garlic powder
1 tsp cilantro
1 tsp salt
1/8 cup vinegar
1/4 cup oil

Wash, stem and grind vegetables.
Mix all ingredients in a large bowl.
Cover and chill for 1 hour.
Makes 6 cups

This one goes to the family get-togethers!

Guacamole
Another Family Favorite

2 ripe avocados, peeled and finely chopped
2 tbsp fresh lemon juice
1 cup homemade salsa, well drained
2 tbsp chopped fresh cilantro
2 tbsp green chilies, diced
1 tsp fresh garlic, minced
1/4 tsp cayenne pepper
1/4 tsp black pepper
1/4 tsp salt

In medium mixing bowl, mash one avocado
with 1 tbsp lemon juice. Stir in salsa, cilantro,
chilies,onion,garlic,red pepper and black pepper.
Mix well. Serve with tortilla chips
and vegetable sticks. Makes 2 cups.
