MISSISSIPPI MUD PIE
24 chocolate wafers, finely crushed (about 1-1/3 cups), divided
3 tablespoons butter, melted
1/2 gallon coffee-flavored ice cream, slightly softened
FUDGE SAUCE:
2 squares (1 ounce each) unsweetened chocolate
1/2 cup water
1-1/2 cups light corn syrup
1/8 teaspoon salt
1 teaspoons vanilla
TOPPING:
1 cup whipping cream
1 tablespoon sugar
1 teaspoon vanilla

Combine chocolate crumbs and butter; set aside 3 tablespoons for garnish. Press remaining into the bottom and up the sides of a 9-in. pie plate. Bake at 375 degrees for 8 minutes; cool. Pack ice cream into cooled crust. Freeze until firm. In a saucepan, melt chocolate with water over low heat until blended. Remove from heat; gradually add corn syrup and salt. Bring to a boil; reduce heat and simmer for 10 minutes, stirring often. Add vanilla.
Set aside. For topping, whip cream; add sugar and vanilla. To serve, cut pie into wedges, place on dessert plates; pour fudge sauce over each and top with a dollop of topping. Sprinkle with reserved crumbs.
Yield:8 servings.
