Papa Joe's Potatoes

This dish was based on the recipe of the generation of DeGiorgios that immigrated from Trentino. 
It caught the attention of a Sunday newspaper food editor and was a featured recipe a couple of decades ago.
It is, to say the least, delicious! 

In a pan, bring 6 medium potatoes to a boil, cook lightly.  Do this the night before you plan to serve them.

Drain the potatoes and let set overnight.  Grate the potatoes.

In a frying pan: 
1/2 lb. diced bacon, fry crisp.
2 medium onions.  Cook in the bacon.  Drain pan.

In another frying pan: fry the potatoes, dry.
Dump in the bacon and onion.
Add several diced slices of salami.
Salt, pepper & garlic salt to taste.
Fry to desired consistency.
Smash the potatoes.
Turn potato mixture so the crust mixes in.
Fry some more.
Turn mixture again.

Serve with eggs on top....... (or not).
