~Lemon Curd~

Lemon curd, sometimes called "lemon cheese", is a very common
English preserve. It's used as a spread for sandwiches,
muffins, crumpets and also makes a delicious tart
filling! It's lemon flavor is truly lovely!

Ingredients needed:

Directions:

  1. Combine lemon peel, lemon juice, eggs, butter, and sugar in the top of a double boiler.
  2. Stir, over heat, until the sugar is completely dissolved. Continue to cook until thickened and smooth, stirring occasionally.
  3. While it's hot you may divide into 2 equal portions and pour into 2 half-pint sterilized jars, capped with 2 sterilized lids.

  4. *Lemon curd needs to be stored in the refridgerator and will only last for about a couple of weeks. Makes 1 pint.
