~Lemon Curd~
Lemon curd, sometimes called "lemon cheese", is a very common
English preserve. It's used as a spread for sandwiches,
muffins, crumpets and also makes a delicious tart
filling! It's lemon flavor is truly lovely!
Ingredients needed:
- Grated peel of 4 lemons
- Juice of 4 lemons (about 1 cup)
- 4 eggs, beaten
- 2 cups sugar
Directions:
- Combine lemon peel, lemon juice, eggs, butter, and sugar in the top of a double boiler.
- Stir, over heat, until the sugar is completely dissolved. Continue to cook until thickened and smooth, stirring occasionally.
- While it's hot you may divide into 2 equal portions and pour into 2 half-pint sterilized jars, capped with 2 sterilized lids.
*Lemon curd needs to be stored in the refridgerator and will only last for about a couple of weeks. Makes 1 pint.
