On my homepage I had mentioned my grandmother made
Ice Box Cookies (or refrigerator cookies as some may say).
I had a couple of people say they wanted the recipe, so
here it is, and a couple more from her recipes.


ICE BOX COOKIES

1 C. Brown Sugar
1 C. White Sugar
1 C. plus 2 Tbsp Butter
1 Eggs, well beaten
4 1/2 C. Flour
1 Tsp. Salt
1 Tsp. Soda
1 C. Nuts
1 Tsp. Cinnamon, rounded

Cream sugar and shortening. Blend well-beaten egg with
creamed mixture. Sift dry ingredients and salt. Add nuts.
Knead into 2 or 3 loaves. Leave in the ice-box overnight,
or longer, wrapped in waxed paper. Slice thin with sharp
knife and bake on buttered cookie sheet in hot oven.
(400 degrees) For 10-12 minutes.

SWEET POTATO PUFFS
2 C. mashed cooked sweet potatoes
1 Egg, beaten
1/2 Tsp Salt
1/8 Tsp Pepper
1 Tsp Cinnamon
8 Marshmallows
1/2 C Crushed Corn Flakes

Mix the first 5 ingredients together, and form 8 round
balls. Make a hole going to center of each and insert
marshmallow, and cover back up. Roll in the corn flake
crumbs. Fry in deep fat, browning all sides. (Or can bake
at 300-325 degrees for 20-25 minutes)

BAKED MACARONI AND CHEESE
2 C. Macaroni(short lengths)
1/2 Lb. Grated Cheese
Salt and Pepper (to taste)
1 1/2 C. Milk
2 Tbsp. Butter (or Oleo)

Boil and drain macaroni. In a baking dish, place in layers,
first the macaroni, then cheese, then oleo, and salt and
pepper a little. Then do the same again, making layers until
all is in the dish. Have the top layer macaroni only with butter
or oleo on it. Pour in milk, just enought to cover well. Bake in
over at 350 degrees for about 30 minutes.

CORN STICKS
1 1/2 C. Corn Meal
1/4 C Flour
1 Tsp Soda
1 Tsp Salt
1 Tsp Sugar
2 Eggs, beaten
2 C Buttermilk

Add buttermilk and egg to dry ingredients. Put 1 Tbsp fat into
heated cornstick pans. Pour in mix, bake at 425 degrees for
20 minutes. (about 3 dozen)

These are two of my Mother's recipes,
that we have loved
through the years!!

MOCK PECAN PIE (makes 2 pies)
1 Stick Oleo
1 Cup White Syrup
1 Cup Quick Oats
2 Eggs, beaten
1 Teaspoon Vanilla

Mix well, pour into 2 unbaked pie shells.
Bake at 350 degrees for 35-45 minutes.

IMPOSSIBLE PIE
4 Eggs
2 Cups Cold Milk
¾ Cup + 1 Tablespoon Sugar
½ Cup Flour (All Purpose)
¼ Cup Melted Oleo
1 Teaspoon Vanilla
1 Cup Shredded Coconut
Mix all, in order given, in a mixer/
high speed. Pour into 10" pie pan.
Bake 350 degrees for 35-40 minutes
Makes its own crust, filling,& topping

SOME OF MY RECIPES I HAVE GATHERED OVER THE YEARS:

5 FLAVOR CAKE
2 sticks butter
1/2 cup shortening
3 cups flour
1/2 tsp. baking powder
5 eggs, beaten (until lemon colored)
1 cup milk
1 tsp. each flavoring:
Rum, Lemon, Coconut, Vanilla, Butter
Glaze (recipe below)
Cream butter, shortening & sugar. Add eggs.
Sift flour and baking powder. Add alternately
with milk. Add flavorings and bake in tube
pan at 350 degrees for 1 1/2 hours.

GLAZE
Combine 1 cup sugar, 1/2 cup water & 1/2 tsp
each flavoring.(this is more of each flavoring)
Boil until sugar dissolves. Drizzle over hot
cake. Let stand in pan until cool.
