I love to cook and try out new recipes. About 5 years ago, I was diagnosed with diabetes so I am always looking for good diabetic recipes. The challenge is finding good baked goods recipes, like cake or cookies. I have found some good links for diabetics which I will include here along with with other links to food and cooking.
I plan to include some of your favorite recipes here, too, so send me yours and when I have enough, I'll put them up. It might be fun with the holidays coming to have a page with holiday recipes! Let's get started!

Baked Sloppy Joes
Biscuit dough
1/4 c. mayo
1 15-1/2 oz. can thick spaghetti sauce
1 lb. hamburger
paprika
Heat oven to 400. Grease a square 8x8x2 pan. Prepare biscuit dough as
directed on package. Add may and mix well. Spread 1/2 of mixture into
pan. Cover with meat and sauce mix. Drop spoonfuls of remaining dough
over top. Spread together with a fork. Sprinkle with paprika.
Bake uncovered for 30-35 minutes. Cut into squares to serve.

Taco Salad
1 lb. ground beef, cooked and drained
1 onion, chopped
2 T Taco Seasoning
Brown meat with onion if you like. Mix in seasoning and cool.
Layer the following in a 9x13 pan:
Ground beef mixture
1 can (16 oz.) kidney beans (can use chili beans)
1 small head of lettuce (torn in small pieces)
3 fresh tomatoes, chopped
2 cups shredded cheddar cheese
Dressing: 1 cup French Catalina or Western dressing
1 T. Taco Seasoning
Spread over top and let sit for an hour or so. Just before serving, crush
1 bag of Nacho Doritos over top.

Rice Family Version of Mostaccioli
2-1/2 lbs. lean but not round ground beef
2 16 oz. cans stewed tomatoes
3 tsp loose beef bullion
1 medium onion, chopped
A shake or two of garlic
1 T sugar
2 lb. box Velveeta
Cooked spaghetti
Brown meat, onion and garlic together. Add rest of ingredients and simmer
for about 1/2-3/4 hour. Cool. Make about 3/4-1 lb. of spaghetti. Drain.
Put one layer of spaghetti, 1 meat mixture, one layer Velveeta cheese,
sliced (cover the entire layer). Repeat layers. Usually you will have 2
layers. Sprinkle with Parmesan cheese, if desired.
Bake at 350 for 3/4 to 1 hour.

Italian Pasta Salad
1 package (16 oz.) Mueller's Pasta Quick, cooked and drained
1 bottle (16 oz.) Kraft Zesty Italian Dressing
1 cup chopped green pepper (cut in very small pieces)
1 cup Hormel Sliced Pepperoni (cut in half)
1 cup Lindsay Olives California Ripe, sliced
1/2 cup (2 oz.) grated parmesan cheese
2 tsp. oregano
1 tsp. minced garlic
1/4 tsp. black pepper
1/4 tsp. salt (optional)
Place pasta in a large bowl. Blend in all other ingredients. Chill and
toss before serving.
Fast Cookies
1 egg
1 package chocolate chips or other flavor of choice>
1 stick of soft margarine
1 DRY Betty Crocker cake mix (your choice, but MUST be pudding in the mix
kind)
Mix together. Drop by spoonfuls on greased cookie sheet. Bake at 350 for
10-12 minutes. (Watch closely and adjust baking time according to your
oven.)
Be creative!! This recipe will allow that. Enjoy!!

Refrigerator Fudge
3/4 cup evaporated milk
2-1/4 cup sugar
2 (6 oz.) packages of chocolate chips
1/3 cup Karo white syrup
2 T. butter
1 tsp. vanilla
1 cup chopped nuts
mint flavoring (optional)
Mix milk and sugar in heavy saucepan. Cook over med-high heat stirring
constantly until mixture boils. Turn heat low, cook 10 minutes, stirring
constantly. Remove from heat. Add chips, syrup, butter and vanilla. Stir
until chips are melted smooth. Add nuts (and mint flavoring). Put into a
9x9 pan for 1 to 2 hours.
Delicious!!!

Blueberry Muffins
This makes 12-20 muffins depending on size.
1/2 cup butter or margarine, softened
1 cup sugar
2 eggs
2 cups all purpose flour
2 tsp double-acting baking powder
1/2 tsp salt
1/2 cup milk
1 tsp vanilla
2-1/2 cups blueberries
Sugar to sprinkle on tops of muffins
Grease 1 12-cup muffin pan. Preheat oven to 375. In a large bowl with a
mixer at medium speed, cream butter and sugar til light and fluffy. Add
eggs one at a time, beating well after each addition. Combine flour, baking
powder and salt. Add alternatively to crmixture with milk and vanilla.
Crush 1/2 cup of blueberries and add to batter. Fold remaining blueberries
into batter and spoon into muffin cups. Sprinkle with sugar.
Bake 30 minutes or til toothpick inserted in center comes out clean. Cool
in pan 5 minutes and turn onto wire rack.
Inspired by the muffins sold at Boston's Dept. Store, Jordan Marsh. They
freeze well.
Zucchini Bread
3 eggs
1 cup oil
2 cups sugar
3 tsp. vanilla
2 cups grated zucchini
3 cups flour
1 tsp salt
1/2 tsp soda
1/4 tsp baking powder
3 tsp. cinnamon
2/3 cup chopped nuts
Beat eggs til light and fluffy. Add oil, sugar, vanilla and grated zucchini
Mix lightly but well. Add flour, soda, salt, cinnamon and baking powder.
Mix until well blended. Add nuts and mix.
Bake at 325 for 1 hour or until done. Make sure to grease and flour pans
well! Makes 2 loaves.

Easy Shrimp Dip
1 container soft whipped cream cheese
6 containers of shrimp cocktail sauce
Place cream cheese in a nice serving dish. Pour cocktail sauce over and
serve with a variety of crackers for dipping. (You may want to carefully
mix sauce and cheese together some and make SURE you use whipped cream
cheese.>

2 lb. box Velveeta
1-1/2 tsp. onion powder
1/4 tsp garlic powder
1/2 cup cheese sauce mix (powdered for thickening)
caraway seed
1/4 tsp Liquid Smoke
3 cups water
Mush the cheese up with 1 cup water. Add rest of ingredients and another
cup of water. Mix till it gets sticky (or til your mixer stops dead!).
Then add the rest of the water and mix til blended. It helps if the water
is boiling.
Place in a serving bowl and serve with crackers, chips, veggies, etc.
This recipe came from a friend on the campus of the University of Illinois
many years ago!
Cheese Squares
1 loaf French bread (day old)
1 3-1/2 oz. cream cheese
1/4 lb. cheddar cheese, grated
1 stick of margarine
2 egg whites beaten stiff
Remove crust from bread. Cut into 1" cubes. Microwave cheeses and
margarine til creamy. Fold in egg whites. Dip bread in batter. Place on
cookie sheets lined with wax paper. Fast freeze. When frozen, place in
ziplock bags. Will keep for months.
To serve: Take out what you need from the freezer, and bake at 450 for
about 10 minutes. Great quick snack for company or when the kids come home
from school!

Tips To Lower Your Fat Intake
1. Simmer soups and stews in lower fat canned broths. Spoon off any excess fat
after cooking.
2. Thicken sauces by stirring in pureed vegetables or corn starch instead of flour or
butter.
3. Bake dressings instead of stuffing into roast poultry.
4. Baste with broth to add moistness to poultry.
5. Bake with low-fat or non-fat condensed milk. Substitute for cream and sauces.
6. Use low-fat mayonnaise.
7. Use water-packed tuna instead of tuna packed in oil.
8. Try non-stick sprays instead of butter or oil when making pancakes or eggs.
9. Use egg whites instead of whole eggs. Substitute 2 egg whites for 1 whole egg.
10 Use buttermilk or low-fat milk instead of whole milk when making desserts. If
you use cocoa powder, it is a great replacement for real chocolate!
Here are a couple of quick and easy diabetic recipes.
Cappuccino Parfaits
4 tsp instant coffee
1 T. hot water
1-1/2 cups cold 2% milk
1 package (4 serving size) JELLO Vanilla or Chocolate Flavor Sugarfree
instant pudding
1/2 tsp ground cinnamon
1 cup thawed COOL WHIP LITE whipped topping
3 chocolate wafer cookies, crushed
Dissolve coffee and hot water in medium bowl. Add milk, pudding mix and
cinnamon. Beat with wire whisk 1 to 2 minutes. Let stand 5 minutes or
until thickened. Gently stir in whipped topping.
Spoon 1/2 of the pudding mixture into 5 dessert dishes. Sprinkle with
crushed cookies. Spoon remaining pudding mixture over crushed cookies.
Garnish each serving with additional whipped topping. (optional)
Refrigerate until ready to serve. Makes 5 servings.
Strawberry Yogurt Dip
1 cup thawed COOL WHIP LITE
1 container (8 oz.) Strawberry Lowfat Yogurt
1/2 cup finely chopped strawberries, sweetened
Mix whipped topping, yogurt and strawberries in smal bowl. Serve as a dip
with fresh fruit. Makes 2 cups.
Dipping fruit you can use: strawberries, peaches, bananas.
Chocolate-Banana Shake
2 cups skim milk
1 tsp. unsweetened cocoa
1 medium banana, sliced
1 packet sweetener
1. Combine all ingredients in container of an electric blender. Cover and
process until frothy.
2. Pour into individual glasses, and serve immediately. Makes 3 servings.
Strawberry Mousse
1 3 oz. package sugarfree strawberry gelatin
1/2 cup water
1-1/2 cups sliced fresh strawberries
2/3 cups instant nonfat dry milk powder
6 ice cubes
1. Combine gelatin and water in a small saucepan, stirring well. Let stand
1 minute. Cook over low heat, stirring constantly, 1 minute or until
gelatin dissolves.
2. Combine gelatin mixture, strawberries, and milk powder in container of
blender. Cover and blend until smooth. Add ice cubes, one at a time,
process until blended.
3. Spoon mixture into 6 parfait glasses. Cover and chill. Serves 6.
