King Arthur 100% White Whole Wheat Flour -- (Not enriched flour)

tablespoons frozen apple juice concentrate -- thawed
1 1/2 tablespoons
gluten, wheat

teaspoons active dry yeast
Put all ingredients into the
bread machine in the order that your machine specifies.

cup stone ground
whole wheat flour
1/4
cup cold water
1/4
teaspoon baking powder
1/4
teaspoon salt
1 1/2 teaspoons
oil
In bowl of food processor,
combine flour, baking powder, and salt.
Turn food processor on high
and add oil. Add water gradually until mixture
cleans sides of bowl and forms
ball in center of bowl. Let the machine
knead the dough for 2 minutes.
Remove dough and divide into 4 parts.
Let rest 10 minutes.
Roll very thin on flour covered board. Bake on
lightly oiled or sprayed griddle.
Turn when little bubbles appear and bake
other side. Use for
tacos, burritos, enchiladas, etc.. Makes 4 tortillas.

teaspoon baking soda

cup yogurt
1/2
cup skim milk
1/2
teaspoon salt -- scant
1/2
orange
(whole orange processed including peel)
1/3
cup dried apricots
-- chopped
1/2
cup sugar substitute
(mixed Splenda, Sugar
Twin, or whatever you'd like)
1/2
teaspoon cinnamon
1/2
teaspoon nutmeg
Mix Oatmeal and Bran with all
wet ingredients and allow to sit. Mix all
other ingredients. Then
combine and bake for 20-25 minutes on 375. Makes
12 muffins. Approx.
150 calories/muffin.
