Pinto Bean Fudge

1 c cooked pinto beans

½ c milk

6 oz unsweetened baking chocolate

6 tbsp margarine

1 tsp vanilla

2lb confectioners sugar

Instructions :


Mash beans with milk in a bowl to consistancy of mashed potatoes
Heat chocolate and margarine in a double boiler, until melted. Stir into
the bean mixture, until this is slightly thickened. Add vanilla and the
sugar. Beat the mixture until well blended. then spread the mixture into
a greased dish,and chill in fridge. Cut this into squares. Serves 56onces

 

Velveeta Fudge

 

1 lb velveeta cheese,softened

2 c margarine, softened

4 16oz pckgs confectioners sugar,sifted

1 c. unsweetened baking cocoa

1 18 oz jar peanut butter

3 c. chopped pecans

4 tbsp vanilla

 

Instructions:


Combine the velveeta cheese, margarine, sugar, and cocoa in a large bowl
Knead this mixture until well mixed. Next, add the peanut butter,pecans,and vanilla.
Knead this until smooth. Press into a greased baking dish. Chill this in thefridge. when firm cut into small squares, and store in airtight containers. serves 10 lbs
