Baked Apple French Toast ... I won this dish
at the Spring 1997 Homemakers Schools. We love it! 1 can (21 oz.) Comstock, Thank You or Wilderness Apple Pie Filling
(you can also use blueberry)
3 eggs
1 C. milk
1 t. Spice Islands vanilla extract
10 slices day old French bread or 8 slices day old cinnamon raisin
bread (1/2" thick)
2 T. butter or margarine, melted
1 T. sugar
1/8 t. Spice Islands ground cinnamon
Spoon pie filling into a greased 13" x 9" x 2" baking dish. In a bowl,
beat eggs, milk and vanilla. Dip bread slices in egg mixture for 1 minute.
Arrange 2 rows of bread on top of the pie filling, overlapping slices slightly.
Brush bread with melted butter. Sprinkle with sugar and cinnamon. Bake,
uncovered, at 350* for 30-35 minutes or until lightly browned. Serve fruit
side up. Yield: 4-6 servings
Buttermilk Biscuits ... This is Nanna's!
She was making these for Easter morning breakfast and those of us in the
kitchen kept a good amount from making it to the table. Some of us didn't
even bother with butter! This is a taste of Heaven! 2-1/4 C. flour
1/4 C. crisco
1/4 t. soda
3/4 C. buttermilk
1/2 t. salt
Combine all ingredients. Pat out 1/2" thick. Cut with 2-1/2" cutter;
or add 1/4 C. buttermilk and drop on ungreased cookie sheet. Bake at 450*
for 10-12 minutes.
Cranberry Bread ... This recipe was given
to me by my Aunt Diana's Sister & Brother-In-Law. They are a
really sweet couple. You can visit the at Eric
& Lynne. 2 eggs, beaten
1 C. orange juice
1/4 C. water
2 grated orange rinds
1/4 C. melted butter
4 C. flour
1/2 t. salt
1 T. baking powder
2 C. sugar
1 C. chopped nuts
2 C. chopped cranberries
Combine first five ingredients. Sift dry ingredients and blend well
with creamed mixture. Add nuts and cranberries. Turn into 2 greased and
wax paper lined loaf pans. Bake at 325 degrees for 40 minutes.
Lower heat to 300 degrees and bake 40 minutes more. Remove bread from
pans and peel wax paper before cooling. Can be frozen.
Garlic Cheese 'Red Lobster' Biscuits ...
Makes 9 biscuits 2 C. Low Fat Bisquick mix
3/4 C. skim milk
1/2 C. shredded cheddar cheese
2 T. margarine melted
1/8 t. garlic powder
Heat oven to 450*. Stir all ingredients, except margarine and garlic
powder until soft dough forms. If dough is too sticky, gradually stir in
enough Bisquick (up to 2 T.) to make dough easy to handle. Drop by spoonfuls
onto ungreased cookie sheet. Bake 7 to 9 minutes or until golden
brown. Mix butter and garlic powder, brush over warm biscuits.
Hushpuppies ... About 40 ... This was
in the first Mamacooks

3/4 C. yellow cornmeal
1/2 t. salt
1 t. baking powder
1/4 C. dried onion flakes/minced onion
1 T. sugar
1 C. milk
Combine all dry ingredients; add milk; mix well. Form balls approximately
1" in diameter on spoon and drop into hot frying grease. Deep fry until
golden brown. You will have to turn them once.
Pumpkin Bread ... This came from
a DFriend Cindy, after much coaxing.

GREAT person!!! 1 1/3 C. flour
1 1/2 C. granulated. sugar
1 tsp. baking soda
3/4 tsp. salt
1/4 tsp. baking powder
1/2 tsp. ground cloves
1/2 tsp. ground nutmeg
1/2 tsp. ground cinnamon
1 C. plain canned pumpkin
2 large eggs
1/2 C. vegetable oil
1/2 C. water
1 C. chopped nuts
Grease a loaf pan. Heat oven to 325*. In a midsize bowl thoroughly
mix the flour, sugar, baking soda, and powder, salt and spices. In large
bowl mix pumpkin, eggs, oil, and water. Add flour mixture to pumpkin mixture
and stir just until blended and smooth . Stir in nuts. Scrape batter into
prepared pan and bake about 1 1/2 hours, or until a toothpick inserted
in center comes out clean.
Tumbling Biscuits ... Cracker Barrel Old
Country Store, Old Timey Recipes & Proverbs To Live By Volume 1. These
are wonderful! 1 C. flour
3/4 C. sour cream
1/2 t. salt
2 t. baking powder
1 t. sugar
Mix all ingredients with fingertips. Pat out on floured board 1/2'
thick. Cut with biscuit cutter. Bake on greased pan 10 minutes at 350*.
Waffles ... Ron will actually make these
a serve them to ME in bed on Sunday mornings occasionally. He and the kids
stay downstairs and it is considered my "sanity time". Boy, any wonder
why I keep him!?! 2 Eggs
