Cake Mix Cookies ... I love soft cookies, These
were served at a National Pike Foundation Meeting so I had to get the recipe.
These are great for the kids!!! 1 cake mix
1/3 C. applesauce (NO FAT!!!)
2 eggs
2 C. Good Stuff (chips of any flavor, raisins, mini M & M's, nuts,
etc.)
In a mixing bowl, combine everything but the Good Stuff (Dough will
be stiff). Stir in the Good Stuff by hand to prevent breakage. Drop by
rounded tablespoons onto an ungreased cookie sheet. Bake at 350* for 8-10
minutes or until golden. Cool 2 minutes on cookie sheet then remove to
wire rack. Store in air tight container (kid tight too if you want them
to last until desert!). I like to add a tablespoon of vanilla butter nut
extract and 2C. of english walnuts! The kids like to sprinkle colored sugar
on top. This is a fun recipe to be creative with!!!
Cut-Out Cookies ... My Aunt Ann makes her World
Famous Cut-Out Cookies every Christmas. I brush them lightly with water
before sprinkling them with colored sugar. We have even brushed them with
food coloring. This year ('97) the kids did all of the sprinkling. We had
pink stars and stockings and blue trees. They thought the cookies were
beautiful and that is all that matters!!! 2/3 C. Crisco
3/4 C. sugar
1 T. vanilla
1 egg
4 t. vanilla
2 C. flour
1 1/2 t. baking powder
1/4 t. salt
Cream sugar, shortening and vanilla. Add egg and milk. Sift dry ingredients
and add slowly. Chill 1 hours. Roll out to 1/4" thick. Bake at 375* for
6 - 8 minutes.
Easy Peanut Butter Cookies ... from

2 T. butter or margarine
1/3 C. + 2 t. applesauce
1 1/4 C. all purpose flour
1/2 C. granulated sugar
1/2 C. brown sugar
1 egg
1 t. baking soda
1/4 t. baking powder
dash of salt
Preheat oven to 350*. With an electric mixer on medium speed,
combine peanut butter, butter/margarine, & applesauce in mixing bowl.
Add remaining ingredients & mix well. Roll dough into 1"
balls & arrange 3" apart on nonstick cookie sheets.. Using a
fork, press a crisscross pattern on cookies. Bake until golden, about 10-12
minutes. Transfer to a wire rack to cool. Makes 5 dozen cookies.
Per cookie: 47 calories & 2 grams fat.

Marcus Chocolate Chip Cookie ... I was forwarded this really nasty
story about this recipe and the company only to find that is was completely
fabricated. The company gives the recipe away!!! 1/2 C. unsalted butter, softened
1 C. brown sugar
3 T. granulated sugar
1 egg
2 t. vanilla extract
1/2 t. baking soda
1/2 t. baking powder
1/2 t. salt
1 3/4 C. flour
1 1/2 t. instant espresso powder, slightly crushed
8 oz. semisweet chocolate chips
Cream the butter with the sugars until fluffy. Beat in the egg and
the vanilla extract. Combine the dry ingredients and beat into the butter
mixture. Stir in the chocolate chips. Drop by large spoonfuls onto
a greased cookie sheet. Bake at 375* for 8-10 minutes, or 10-12 minutes
for a crispier cookie. Makes 15 large cookies.
No Bake Oatmeal Cookies ... Great for winter
day snacks with milk. 3 C. sugar
1/4 lb. margarine
1/2 C. milk
dash of salt
1/3 C. cocoa
3 C. quick oats
1 t. vanilla
1/2 C. peanut butter
Boil the sugar, margarine, milk and salt for 1 minute. Add cocoa while
cooking. Remove from heat. Add the oatmeal, vanilla and peanut butter.
Beat until well mixed. Drop by spoonfuls on waxed paper to set and cool.
Makes about 3 dozen.
No-Bake Rum Balls ... "Cook
'Til Done?" 2 C. crushed vanilla wafers
1 C. confectioner's sugar
1 C. walnuts, finely chopped
3 T. dark Karo syrup
1/4 C. dark rum
petite paper baking cups
I know this is messy, but in a large bowl combine all ingredients using
your hands. Form dough into a ball, cover and refrigerate for 1 hour. Roll
the dough 1 tsp. at a time between the palms of your hands to form
1 in. (2.5 cm) balls. Place ball in paper baking cup. Arrange on serving
tray. Refrigerate until ready to serve. Yields 2 dozen.
Raw-Apple Cookies ... Straight from "Family
Favorites Cookbook" published by Ron's Uncle Ken & Aunt Barb - "A great
soft cookie that keeps well. The red apple peel is an attractive addition,
while the sunflower nuts add crunch." 1-1/2 C. flour
1/2 t. of each salt, baking powder, baking soda, cinnamon and ground
gloves
1/2 C. dry roasted sunflower nuts (1/2 C. walnuts if desired)
1/2 C. shortening
1 C. packed brown sugar
2 eggs
1 C. uncooked quick oats
1-3/4 C. chopped tart red cooking apples (2 large)
1/2 C. each plump raisins and chopped pitted dates
Stir together flour, slat, baking powder, soda, cinnamon, cloves and
sunflower nuts; set aside. In large bowl beat shortening and sugar until
creamy. Beat in eggs until well blended. Stir in flour mixture, then oats,
apples, raisins and dates. Drop by well rounded teaspoonfuls 1-1/2" to
2" apart on greased baking sheets. Bake in preheated 350* oven 12 - 15
minutes or until lightly browned. Remove to rack and cool. Make 60

cookie!!! 1 C. margarine, softened

2 eggs
1 t. vanilla
1-3/4 C. flour
1 t. baking soda
3 C. rolled oats
1 C. salted, shelled sunflower seeds
Cream margarine & sugars. Beat in eggs & vanilla. Stir in soda,
flour & oats. Mix in sunflower seeds. Drop by teaspoon on ungreased
cookie sheet. Bake at 350* for 10 minutes.

1 C. margarine, softened
1 C. sugar

3 C. sugar frosted flakes, crushed to equal 1 1/2 C.
1 (6 oz.) pkg. chocolate chips, melted
Mix together flour, soda and salt. Cream margarine and sugar; add flour
mixture and stir in frosted flakes. Drizzle melted chocolate over dough
and swirl gently through mixture. Drop by tablespoons on ungreased cookie
sheet. Bake at 350* for 12 minutes. Makes 5 dozen.
