Beef Burgundy Stew ... A very simple rendition
of and old French recipe. 1 lb. sirloin beef, cute into 1-1/2" cubes
3 T. all-purpose flour
6 slices bacon, cut into 1" pieces (about 1/2 lb.)
1 large onion, cut into wedges (about 1-1/2 C.)
2 garlic cloves, minced
5 carrots, cut into 1/2" pieces (about 1-1/2 C.)
12 small mushrooms
1 C. dry red cooking wine
1/2 C. A1 (original or bold) steak sauce
Coat beef with flour, shake off excess; set aside. In a 6 qt. pot over
medium heat, cook bacon until crisp; remove with slotted spoon and set
aside. In the same pot, brown beef in bacon drippings. Add cooked bacon,
onion, garlic, carrots, mushrooms, wine and steak sauce. Cover and simmer
for 40 minutes or until carrots are tender, stirring occasionally. Yields:
6 servings
Beer Beef Stew ... Serves 8 ...

1 - 10 3/4 oz. can cream of mushroom soup
1 pkg. dry onion soup mix
1 soup can beer, non-flat
1 C. canned or 3 fresh peeled & quartered tomatoes
1 can pearl onions (makes a better appearance than 1 whole diced but
you can do that as well)
4 - 6 medium potatoes, peeled & quartered
2 - 3 ribs celery, slices into 2" chunks (I cut on a diagonal for appearance)
2 - 3 carrots, slices into 2" chunks (I cut on a diagonal for appearance)
1 t. Worchestershire Sauce
Combine meat, soup, onion soup miz and beer in Dutch oven, Cover and
cook on medium-low for 3 hours. Add tomatoes, onions, potatoes, celery,
carrots and Worchestershire Sauce. Conyinue cooking about an hour.
Brunswick Stew ... my mother-in-law, Carole
Yeakle, makes hers with additional vegetables 1 chicken cooked off and meat removed from bones (reserve broth)
4 slices bacon
1 small onion, diced
a pinch of salt
a pinch of Hickory Smoked salt
1 lb. can of tomatoes
1 can (12 oz.) whole corn
4 medium potatoes, dices (I do not bother peeling)
1 T. corn starch
1/4 C. water
Dice the bacon a brown in kettle. Add reserved chicken broth, seasonings,
chicken and vegetables. Simmer for 1 hour or so. Mix corn starch and water
together and add to pot, stirring well to thicken without lumps. This will
give the kids and I a bowl and my husband a large bowl.
Corn Chowder ... Very old recipe 4 slices bacon, diced
2 T. onion, minced
1 T. celery, minced
1 t. peppers, minced
2 C. corn
2 potatoes, diced
3 tomatoes, cut up
2 pints milk
salt
pepper
Put bacon into pan to brown, add onion, celery and peppers; fry until
bacon is crisp. Add the corn and sauté together for 3 minutes. Add
the potatoes, tomatoes and seasonings, cover and simmer 30 minutes. Finally
add the milk, heat to the boiling point and serve with chopped parsley.
Frankly Stew ... I fixed this for my kids,
they loved it!!! 1 pkg. hot dogs (Frankfurters), cut into bite size chunks (I use fat
free franks)
2 T. onion, diced
1 t. garlic
1 can (6 oz.) tomato juice
several dashes of Worcestershire Sauce
dash of celery salt
1 can (16 oz.) kidney beans, drained (light or dark)
1 can (16 oz.) corn, undrained
1 C. shredded Cheddar cheese
Combine everything but cheese in a large sauce pan. Cook on medium
until thoroughly heated. Remove from heat; add cheese and stir until melted.
Serves about 6 since it lasted me for warm ups another day. Reduced
fat recipe. Hungarian Goulash ... I love this one!!!
It tastes better than it sounds!!!! 3 bacon strips, diced
1 small green pepper, seeded and chopped
2 medium onions, chopped
1 large garlic clove, minced
1 1/2 lbs. beef stew meat, cut into 1/2" cubes
2 T. paprika
1 1/2 t. salt
pepper to taste
dash of sugar
14 1/2 oz. stewed tomatoes, chopped
3 C. beef broth
2 large potatoes, peeled and diced
1/2 C. sour cream
In a large skillet, cook bacon until almost crisp. Add green pepper,
onions and garlic, cooks until tender. Add beef cubes and brown on all
sides. Sprinkle with paprika, salt and sugar; stir and cook for 2 minutes.
Add tomatoes and broth. Cover and simmer for about 1 1/2 hours or until
beef is tender. About 1/2 hour before serving, add potatoes and cook until
tender. Garnish each serving with a dollop of sour cream. Makes about 8
servings.
New England Clam Chowder ... This one came
from Ms. Mary.

should be filled with more bosses like her!!! Not only is she wonderful

that!?! 4 slices bacon, diced
4 med. potatoes peeled and diced
2 cups clam juice
3/4 t. salt
1 cup whipping cream
2 green onions, tops included chopped
3 T. flour
2 6 1/2 ounce cans minced clams with liquid
1/2 t. white pepper
In a large heavy sauce pan sauté the bacon until crisp. Add the
green onion and potatoes sauté for a few minutes. Sprinkle with
flour. Add clam juice. Stir to blend well. Bring to a boil. Simmer, stirring,
until potatoes are tender about 20 minutes. Add salt and pepper. Finally
add clams with liquid and whipping cream. Heat soup, stirring, just until
simmering. Do not boil or clams will toughen.
ShipWreck Stew ... I found this on The
ZaneyChefs homepage. Stop by and visit them. They have a really cool
place. This recipe is wonderfully quick and delicious! 1 lb Ground Beef
2 T. Butter
3 slices Onion
3 cups Potato (diced raw)
1/4 cup Rice (uncooked)
1 cup Celery (diced)
1/2 cup Water
2 cans Kidney Beans (drained)
1 can Tomato Sauce
1 can Whole Tomatoes
1/4 tsp Worcesteshire Sauce
1/4 tsp Chili Powder
1 tsp Salt
Lightly mix all ingredients in a casserole dish, cover and bake for
1 hour at 350*
Smoked Sausage Supper ... Great, easy and
can be mixed up in advance for picnics. 1 lb. smoked sausage, cut into 1" pieces
1 large onion, cut into thin wedges
3 T. vegetable oil, divided
1 can (14-1/2 oz.) tomatoes, undrained, diced
2 cans (16 oz. each) baked beans (I prefer Bush's)
1 C. self rising corn meal mix
1/4 t. Cayenne Pepper
2/3 C. milk
1 egg, beaten
In a large skillet over medium-high heat, cook sausage and onion in
1 T. vegetable oil, until onion is tender. Stir in tomatoes and beans;
reduce heat and simmer 5 minutes. Pour into a greased 13" x 9" x 2" baking
dish. In a small bowl, combine corn meal mix, cayenne pepper, milk egg
and 2 T. oil; stir until smooth. Pour over sausage mixture. Bake for 25-30
minutes or until golden brown. Yields: 6-8 servings
