They are grown in a square mold, so that they come out the EXACT size that fits nicely into the small Japanese refrigerators. You can imagine the hassle they used to have when you look at how much space they take up in your Frigidaire (do they still call them that?).
This is a marvel of Japanese ingenuity. The simplicity of it is astounding! Why has no one else ever thought of it before? Maybe because our monstous refrigerator boxes kept getting bigger, and there was no need. This is also a neat little size, so you don't have to eat watermelon twice a day before it gets bad. It wouldn't be so bad if the most important main food group weren't so atrocious .. the one item with a recipe that is universal .. really!!
