Spicy Foods from around the world



Welcome to my cooking page. Here for your cooking and eating pleasure are some foods from some of the places I have lived. You will notice they are spicy. There is the misconception that people who like spicy food are crazy people who love to have their mouth on fire, that is not so! Spices add to the food, but I'll tell you this much, when I die and go to heaven I'm not going without my chili powder!

Calzone
INGREDIENTS:
•1 ball of basic pizza dough (enough dough for 1 pizza)
•1 tablespoon olive oil
•Salt and white pepper
•1/2 cup thick sun dried tomato pesto*
•1/2 cup roasted garlic**
•1 cup diced Italian sausage, cooked
•1 red pepper, roasted, peeled, seeded and julienned**
•2 tablespoons chiffonade of basil
•4 (1/4-1/2-inch) slices of Mozzarella cheese
•1 egg, beaten
•1 cup spicy tomato sauce or Ro-tel sauce (hot )
•2 tablespoons grated Parmigiano-Reggiano cheese(garnish)
•1 tablespoon chopped green onions or scallions(garnish)
•1 Roasted red bell pepper{garnish}**

PREPARATION:
•Preheat the oven to 500 degrees. Place the dough out onto a floured surface. Roll the dough out to form a 12-inch circle.
•Spread the pesto over one half of the dough. Layer the garlic, sausage, peppers, and basil, alternately over the pesto. Lay the Mozzarella cheese over the basil. Fold the other side of the dough over the filling and pinch the edges to seal the calzone.
• Make two slashes across the top of the calzone. Place the calzone on a parchment-lined baking sheet. Brush the calzone with the egg wash.
•Bake for 20 to 25 minutes or until golden. Spoon the sauce in the center of the plate. Slice the calzone in half and place in the center of the sauce. Garnish with the grated cheese, scallions and sliced roasted peppers. Serves 2

Featured Recipie
Char's Shrimp/Crawfish Etouffee

Things you will need:
  • 3-4# of shrimp or crawfish (cleaned)
  • 1 pound of butter
  • 1 can of Rotel type diced tomatoes/green chilies (drained)
  • 1 onion, chopped
  • 1 bell pepper, chopped (optional)
  • 2 TB Minced garlic
  • Cajun seasoning to taste (if needed)


  • Combine all ingredients except shrimp or crawfish and simmer on low till veggies are almost nonexistent and butter sauce is thick (light brown). Add seafood and simmer approximately 25 minutes, stirring often to ensure seafood is well coated with butter/veggie mixture. May be served alone or over cooked white rice -- a meal all on it's own or serve with your favorite side dishes and hot garlic bread of choice.

    Lets never forget that too many people go to bed hungry day after day, here in the US and throughout the world. Especially during the Holiday Season we are often made aware of the wonderful work that a lot of giving people and organizations do in caring for those less fortunate. Some of us volunteer to help out with what we can, but it can't just be in December!! We cannot forget those in need once the Holidays are over. Please give generously to organizations in your community that help to feed the hungry.
