Chinese Recipe for Beef with Black Bean Sauce

INGREDIENTS

  • 2 tbsp salted black beans
  • 2 tsp cornflour
  • 1/2 cup beef stock
  • 1 tbsp soy sauce
  • 1 tsp sugar
  • 1 clove garlic (crushed)
  • 1 onion (cut into wedges)
  • 1 small red capsicum (chopped)
  • 1 small green capsicum (chopped)
  • 400g rum steak (sliced finely)
  • 1 tbsp oil
  • dash of black pepper

To prepare:

  • Rinse black beans several times, drain and mashed
  • Dissolve cornflour in stock, add soy sauce and sugar
  • Heat oil in wok
  • add onion, garlic, red & green capsicum, black pepper and stir-fry for 1 min
  • Remove from heat and set aside
  • Add more oil to wok, add beef and stir-fry over heat for 2 mins (or till brown)
  • Add black beans, cornflour mixture and vegetables
  • Stir till sauce boils and thickens
  • Remove and serve with rice
