Indian Beef Vindaloo
INGREDIENTS
- 2 tbsp ghee or oil
- 2 lb beef chuck or blade (cut into strips)
- 3 onions (sliced)
- 3 tsp grated ginger
- 3 cloves garlic (crushed)
- 1 cinnamon stick
- 1/3 cup brown vinegar
- 1/2 cup beef stock
- 1 tsp sugar
- salt & pepper to taste
Mix the following spice mix:
- 1/2 tsp ground cumin
- 1 tbsp coriander seeds
- 1 tsp ground fenugreek
- 1/2 tsp chilli powder
- 1 tsp ground turmeric
- 1 tsp mustard powder

To prepare:
- Heat ghee or oil in pan
- Cook steak in batches till brown and set aside
- Put all ingredients for spice mix into a food processor and process till finely ground
- In a pan, add onion, ginger, garlic and cinnamon
- Stir over low heat till onion becomes soft
- Add spice mix and steak then stir till meat is coated
- Add vinegar, stock, sugar and salt & pepper
- Cook covered, using low heat for 1 1/2 hour or till meat is tender
- Discard cinnamon and serve with rice
