Indian Beef Vindaloo

INGREDIENTS

  • 2 tbsp ghee or oil
  • 2 lb beef chuck or blade (cut into strips)
  • 3 onions (sliced)
  • 3 tsp grated ginger
  • 3 cloves garlic (crushed)
  • 1 cinnamon stick
  • 1/3 cup brown vinegar
  • 1/2 cup beef stock
  • 1 tsp sugar
  • salt & pepper to taste

    Mix the following spice mix:
  • 1/2 tsp ground cumin
  • 1 tbsp coriander seeds
  • 1 tsp ground fenugreek
  • 1/2 tsp chilli powder
  • 1 tsp ground turmeric
  • 1 tsp mustard powder

To prepare:

  • Heat ghee or oil in pan
  • Cook steak in batches till brown and set aside
  • Put all ingredients for spice mix into a food processor and process till finely ground
  • In a pan, add onion, ginger, garlic and cinnamon
  • Stir over low heat till onion becomes soft
  • Add spice mix and steak then stir till meat is coated
  • Add vinegar, stock, sugar and salt & pepper
  • Cook covered, using low heat for 1 1/2 hour or till meat is tender
  • Discard cinnamon and serve with rice
