Korean Recipe for Rice Medley (Bibimbap)
INGREDIENTS
- 1/3 cup shredded beef (or ground beef)
- 1/2 tsp light soy sauce
- 1 tsp sesame oil
- 1/2 tsp sugar
- dash of ground pepper
- 1/2 clove garlic (minced)
- 4 shiitake mushrooms (shredded)
- 1/2 cup carrots (shredded)
- 1/2 cup cucumber (shredded)
- 1 cup spinach salad - see below
- 1/2 cup bean sprout salad - see below
- 1/2 cup spicy daikon salad - see below
- 2 fried eggs (over easy)
- 2 tbsp hot sauce
- 1 cup lettuce (shredded)
- 2 bowls cooked rice
Ingredients for Spinach Salad (Si Kum Na Mul)
- 1 bunch of spinach (or 1 packet frozen spinach - thawed)
- 1/2 tsp salt
- 1/2 tsp sesame oil
- 1/4 tsp garlic clove (minced)
Ingredients for Bean Sprout Salad (Sook Ju Namul)
- 300g mung bean sprouts
- 1/2 tsp salt
- 1/2 tsp sesame oil
- 1/4 tsp garlic clove
- Ingredients for Spicy Daikon Salad (Mu Chae)
- 150g daikon (shredded)
- 150g carrots (shredded)
- 1 tsp salt
- 4 tsp sugar
- 1 tbsp rice vinegar
- 1/4 tsp red pepper powder
FYI: Rice Medley or Bibimbap is extremely popular in Korea. Leftovers from side dishes
and hot sauce can served as a simple family dish. Traditionally, this dish is served in a hot stone pot.
Once heated, these stone pots retained heat for a long time, ideal in the winter time.

To prepare:
- Bean Sprout Salad: Blanch sprouts in boiling water
- Rinse the sprouts in cold water, squeeze out exceess water
- Place sprouts in a bowl and mix in salt, sesame oil and garlic
- Spinach Salad: Do the same as the above
- Spicy Daikon Salad: In a bowl, mix in the daikon and carrot
- Add in the salt, sugar, rice vinegar and red pepper powder
- How to prepare bibimbap: in a bowl, combine 1/2 tsp sesame oil, sugar, soy sauce, pepper and garlic
- Add in shredded beef or ground beef to mixture
- Heat oil in frying pan or wok (no extra oil needed) till beef changes color
- Remove and set aside
- heat 1 tsp seame oil
- Add in shiitake mushrooms, carrots then cucumber with a pinch of salt
- Stir-fry over high head and set aside
- Take 2 bowls of steaming hot rice
- Add beef, shittake mushrooms, carrots, cucumber, fried meat and bean sprout, spinach salad, spicy
daikon salad, eggs, lettuce and hot sauce
- Sprinkle with sesame oil and serve
