Vietnam Recipe for Spicy Beef Stew or Bo Kho
INGREDIENTS FOR SPICY BEEF STEW
- 2 lbs top round beef (cubes)
- 6 tbsp cooking oil
- 2 tbsp annatto seeds
- 1 large onion (chopped fine)
- 5 cloves garlic (chopped fine)
- 1 tbsp salt
- 2 tbsp sugar
- 1 cup beer
- 1 stalk lemongrass (bruised)
- 1 cup carrots (chopped)
- 1 cinnamon stick
- 3 pieces star anise
- 1 tbsp curry powder
- 1 cup fresh mint leaves (garnish)
- 2 red chillies (seeded & sliced thin)
TIP: Make a big batch of the stew and you can easily freeze it for at least 3 months.

This Spicy Beef Stew or Bo Kho recipe is a Vietnamese variation on the traditional Western meal.

To prepare:
- Heat oil in wok, then add the annatto seeds
- Stir quickly till oil turns a reddish-brown color
- Set aside, discard seeds
- In a bowl, combine the following: salt, sugar, 1/2 garlic, onion and 1/2 annatto seed oil mixture
- Add beef pieces into the bowl, let marinade for at least 45 mins
- Heat remaining annatto seed oil in a pot and cook remaining garlic till soft
- Add curry powder, beer and marinade
- Braise the beef, adding a bit of water
- Add in lemongrass, star anise and cinnamon stick
- Before the meat becomes tender, add the carrots
- Remove cinnamon stick and star anise
- Simmer everything till done (3 to 4 mins)
- Dish into individual bowls and top with mint leaves and red chillies on the side
