Vietnam Recipe for Spicy Beef Stew or Bo Kho

INGREDIENTS FOR SPICY BEEF STEW

  • 2 lbs top round beef (cubes)
  • 6 tbsp cooking oil
  • 2 tbsp annatto seeds
  • 1 large onion (chopped fine)
  • 5 cloves garlic (chopped fine)
  • 1 tbsp salt
  • 2 tbsp sugar
  • 1 cup beer
  • 1 stalk lemongrass (bruised)
  • 1 cup carrots (chopped)
  • 1 cinnamon stick
  • 3 pieces star anise
  • 1 tbsp curry powder
  • 1 cup fresh mint leaves (garnish)
  • 2 red chillies (seeded & sliced thin)

TIP: Make a big batch of the stew and you can easily freeze it for at least 3 months.

This Spicy Beef Stew or Bo Kho recipe is a Vietnamese variation on the traditional Western meal.

To prepare:

  • Heat oil in wok, then add the annatto seeds
  • Stir quickly till oil turns a reddish-brown color
  • Set aside, discard seeds
  • In a bowl, combine the following: salt, sugar, 1/2 garlic, onion and 1/2 annatto seed oil mixture
  • Add beef pieces into the bowl, let marinade for at least 45 mins
  • Heat remaining annatto seed oil in a pot and cook remaining garlic till soft
  • Add curry powder, beer and marinade
  • Braise the beef, adding a bit of water
  • Add in lemongrass, star anise and cinnamon stick
  • Before the meat becomes tender, add the carrots
  • Remove cinnamon stick and star anise
  • Simmer everything till done (3 to 4 mins)
  • Dish into individual bowls and top with mint leaves and red chillies on the side
