Free Singapore Recipe for Singaporean Grilled Pork Ribs
INGREDIENTS
- 900g meaty pork ribs (cut into serving portions)
- 1 1/2 litres water
- 1 1/2 tbsp honey
- 1 tbsp light soy sauce
- 1 tbsp dark soy sauce
- 1 tbsp black Chinese vinegar
- 1 tbsp rice wine
- 1 1/2 tbsp honey
- 1 tbsp sugar
- 2 cup chicken stock (use chicken bouillon cubes)
- 1 tsp sesame seeds (toasted)
- 1 medium carrot (grated)
- 1 tbsp sugar
- 1 tsp five-spice powder
- 1 tsp salt
- 1 tsp sesame oil
- lettuce leave to serve
- Bottle of hot chilli sauce

To prepare:
- In a pot, bring the water to boil
- Blanch the ribs (5 mins) then drain, discard water
- In a bowl, mimx the honey, light and dark soy sauces, rice wine, black Chinese vinegar, sugar, five-spice
powder, salt and sesame oil
- Stir well then add in ribs
- Mix well so the ribs are well coated
- Set aside to marinade (30 mins)
- When ready to cook, transwer ribs and marinade to wok and add chicken stock
- Bring to boil, cover and simmer (15 mins), stir serveral times
- Transfer ribs to a bowl
- Bring mixture in wok to a boil and cook over high-heat
- Let mixture reduce and become thick and syrup-like in texture
- Pour mixture over ribs and coat the ribs thoroughly
- Drain ribs in a colander
- Heat grill, arrange ribs on a rack set in an oven tray and grill under high heat (8 to 10 mins)
on each side
- Remove and let ribs rest (1 min)
- Arrange bed of lettuce on a platter, place grated carrots on top
- Place ribs on carrots and sprinkle with sesame seed
- Serve hot with chilli sauce on side
I have used beef ribs instead of pork ribs and the recipe works for both.
