Chinese Recipe for Melon and Shredded Ham Soup


INGREDIENTS

  • 1 X 600g Chinese winter melon or cucumbers
  • 100g ham (shredded)
  • 5 cups chicken stock
  • 1 tbsp ginger (sliced)
  • 2 tbsp spring onion (sliced)
  • 1 1/2 tbsp light soy sauce

To prepare:

  • Peel melon or cucumbers
  • Cut into think slices and then into 4 cm cubes
  • Place stock in medium pan and bring to boil
  • Reduce heat to simmering
  • Add melon, ginger, spring onion and soy sauce
  • Simmer 2 mins or till melon is tender
  • Add ham to soup, simmer for 1 min or till warmed through
  • Serve immediately

HINT: Steamed slices of winter melon can be served as a vegetable. Dress with a little cooked crabmeat moistened with chicken stock.
