Indian Recipe for Musaman or Masaman Beef Curry

INGREDIENTS

  • 2 tbsp oil
  • 500g rum steak (cut into cubes)
  • 2 to 3 tbsp Musaman curry paste
  • 2 onions (chopped)
  • 4 potatoes (cut into large pieces)
  • 2 1/2 cup coconut milk
  • 1/4 tsp ground cardamon
  • 1 cinnamon stick
  • 2 tbsp tarmarind concetrate
  • 3 tsp soft brown sugar
  • 1/4 cup unsalted roasted peanuts (chopped)
TIP: You can buy musaman or masaman curry paste at any Indian store. It is usually made from a blend of chilli, garlic, onion, coriander, cumin and tamarind.

If prefer, you can subsitute lemon juice instead of tarmarind.

To prepare:

  • Heat oil in wok pan
  • Add cubes of steak into wok, fry till browned
  • Remove and drain well on paper towel
  • Add curry paste to wok, stir-fry for 1 min
  • Toss in onion, potato and cook till golden brown
  • Return cubes to wok, stir in coconut milk gently
  • Add cardamon, cinnamon stick, tarmarind (or lemon juice), sugar and 1/2 cup of water
  • Bring everything to a boil
  • Reduce, simmer for 20 to 30 mins or till meat is tender
  • Discard stick and stir in the peanuts thoroughly
  • Serve with basmati rice

Alternatively, instead of adding the peanuts to the mix as you cook, you can sprinkle it over the curry as garnish just before you serve.
