Chinese Recipe for Pork Egg Noodles or Chow Mein
INGREDIENTS
- 175g medium egg noodles
- 350g pork fillet
- 2 tbsp vegetable oil
- 1 tbsp sesame oil
- 2 garlic cloves (crushed)
- 8 spring onions (sliced)
- 2 tbsp dark soy sauce
- 3 tbsp Chinese rice wine or dry sherry
- 175g fresh beansprouts
- 1 green pepper (seeded & chopped)
- 1 red pepper (seeded & chopped)
- 3 tbsp fresh parsley (chopped)
- 1 tbsp toasted sesame seeds

To prepare:
- Soak noodles according to packet instructions
- Drain well
- Slice pork fillets thinly
- Heat oil in wok and cook meat over high heat till golden brown and cooked through
- Add sesame oil to wok
- Add in garlic, spring onions and peppers
- Cook over high heat (3 to 4 mins) or till vegetables begins to soft
- Reduce heat slightly and stir in noodles
- Add in soy sauce and rice wine or dry sherry
- Stir-fry for 2 mins
- Add beansprouts and cook for 1 to 2 mins
- If noodles starts to stick, add a splash of water
- Stir in parsley and serve with sprinkled sesame seeds
