Indian Recipe for Rogan Josh
INGREDIENTS
- 1 kg lamb (diced)
- 1 cup plain yogurt
- 4 cloves garlic (crushed)
- 1 tbsp malt vinegar
- 1 tbsp fresh ginger (grated)
- 2 tbsp ghee
- 3 cloves
- 4 cardamon pods (bruised)
- 1 cinamon stick
- 2 onions (chopped fine)
- 3 tsp ground cumin
- 1 tsp ground fennel
- 1 1/2 tsp paprika
- 1 tbsp ground coriander
- 3/4 tsp chilli powder
- 1/2 cup chicken stock
- 1 tsp garam masala
- 2 tbsp coriander (chopped)
- 1 tbsp fresh mint (chopped)

To prepare:
- In a bowl, combine the yogurt, vinegar and 1/2 garlic and 1/2 ginger
- Mix well then add lamb pieces and mix everything together
- Cover, refrigerate for 3 hours or till required
- Heat ghee in a large saucepan
- Add in the cardamon pods, cloves and cinnamon stick
- Cook till fragrant
- Add in onion and remaining galric and ginger, cook and stir till onions browns
- Add in ground cumin, coriander, fennel, paprika and chilli powder
- Cook, stirring till fragrant
- Add in lamb mixture, stir to coat in spice mixture
- Add in chicken stock, covered for at least 1 1/2 hours
- Remove cover, simmer for another 30 mins or till lamb becomes tender
- Just before serving, stir in garam masala and fresh herbs
- Heat through then serve with rice or naan
TIP: You can marinade the lamb pieces in the refrigerator one day before you start
cooking. You can even freeze the marinade along with the lamb in the freezer for up to a month.
