Vietnam Recipe for Spicy Caramel Pork
INGREDIENTS
- 750g pork neck (cut into pieces)
- 1 onion (cut into wedges)
- 1 tbsp peanut oil
- 1 cup water
- 1/3 cup sugar
- 1 tbsp fish sauce
- 1/2 tsp sambel olek
- 1/4 tsp five-spice powder
- 1 green onion (chopped)

To prepare:
- Heat oil in wok
- Cook pork, stir till browned and tender
- Add in onion wedges, cook, stir till onion is tender
- Cover wok, remove from heat
- In a small saucepan, combine 1/4 cup water with sugar
- Stir over heat (do not boil) till sugar dissolves
- Boil, uncovered, without stirring till sugar is golden brown
- Add remaining water and fish sauce to sugar syrup, stir over low heat till smooth
- Reduce heat, simmer, uncovered till reduced about 1/2 cup
- Stir sauce mixture into pork in pan with sambal olek and spice
- Simmer, uncovered about 5 mins or till pork is heated through
- Serve sprinkled with chopped green onions and steamed rice
