Vietnam Recipe for Vietnamese Sandwiches
INGREDIENTS
- 1 clove garlic (crushed)
- 1/2 tsp kosher salt
- 1/4 cup rice wine vinegar
- 1 tsp sugar
- 1/2 cup carrot (peeled & grated)
- 1/3 cup white onion (thinly sliced)
- 2 tablespoons jalapeno chile (seeded & finely chopped)
- 1 (16 inch) French baguette
- 4 tsp low-fat mayonnaise
- 3/4 lb boneless skinless chicken breast, cooked or pork tenderloin
- 1 tbsp fresh lime juice
- 1/2 tsp five-spice powder
- 1/2 cup fresh cilantro
TIP: If prefer, you can buy authentic meat slabs from Vietnamese deli. They will slice the
meat thinly for you. Some Vietnamese recipe will call for lard or butter to be added to their sandwiches but
I use only plain mayonaise to cut back on the fat.

To prepare:
- Using a chef's knife, smash the garlic and salt into a paste
- Transfer garlic salt to a mixing bowl and add vinegar and sugar, stirring to dissolve
- Add the carrots, onions and chilies and toss everything well
- Slice the baguette into 4 equal lengths and split each piece horizontally
- Spread cut sides with mayonnaise
- Arrange the chicken and pork on the 4 bottom halves
- Sprinkle with lime juice and five spice powder
- Top with the carrot salad and a shower of cilantro leaves
- Cover with bread tops
