Korean Recipe for Braised Spicy Chicken (Dak Do Ri Tang)
INGREDIENTS
- 450g chicken thighs (cut into pieces)
- 6 cloves garlic
- 225g potatoes (cut into pieces)
- 225g carrots
- 1 cup canned chicken broth
- 1 cup water
- 4 tsp light soy sauce
- 2 tsp sugar
- 2 tsp red pepper powder
- 1 onion (sliced)
- 6 green onions (cut into sections)
TIP: For best results, try using baby or new potatoes. There's no need to cut them into pieces because of their size.

To prepare:
- Blanch chicken in boiling water
- Drain and pat dry
- Heat 2 tbsp oil in wok
- Stir-fry chicken till golden brown
- Add garlic, potatoes and carrots and lightly stir
- Add chicken broth, water, soy sauce, sugar and red pepper and bring to a boil
- Reduce heat to low
- Cover and cook for 15 mins
- If too much liquid remains, remove cover and use high heat till liquid is almost evaporated
- Add sliced onions and green onion
- Cook for another 5 mins then serve
