Chinese Recipe for Chicken and Almonds
INGREDIENTS
- 1 tbsp soy sauce
- 1 tbsp cornflour
- 10 oz chicken breast fillet (sliced)
- 2 tbsp oil
- 2 cm fresh ginger (grate finely)
- 1 onion (chopped roughly)
- 1 celery stick (chopped)
- 50g green beans (sliced in halves)
- 1/4 cup canned bamboo shoots (drained)
- 1/4 cup chicken stock
- 2 tbsp Chinese rice wine or sherry
- 1 tsp sesame oil
- 2 tsp cornflour (extra)
- 125g blanched almonds (roasted)

To prepare:
- Mix together soy sauce and cornflour in small bowl
- Pour over hcikcen and leave to stand for 5 mins
- Heat oil in wok till very hot then stir-fry chicken for 2 mins
- Remove and set aside
- Add more oil to wok, re-heat wok and stir-fry onion, ginger and celery for 3 mins
- Add green beans and bamboo shoots, stir-fry for another 1 min
- Add chicken stock, rice wine, sesame oil and 2 tbsp of water
- Cover and steam for 30 seconds
- Mix togther extra conflour with 1 tbsp of water, stir in sauce and bring to a boil
- Return chicken to pan and add in almonds, toss well to combine
- Remove and serve immediately with rice
