Chinese Recipe with Grilled Chicken and Broccoli Salad
INGREDIENTS
- 1 packet of linguine
- 2 carrots (shredded)
- 1 lb chicken breasts fillet (halved)
- 3 cups broccoli (florets)
- 1/3 cup orange juice
- 1/4 cup soy sauce
- 2 tsp sesame oil
- 1/4 cup chilli sauce
- 2 clove garlic (minced)
- 4 scallions (sliced)
- 1/2 tsp ginger (ground)

To prepare:
- Cook linguine according to package instructions till al dente
- Drain, transfer to a large bowl and set aside
- In another bowl, add orange juice, soy sauce, chili sauce, oil, garlic and ginger
- Measure out 1/4 cup of the mixture and set aside
- Add remaining mixture, scallions and carrots to linguine and toss to coat
- In a large bowl, toss broccoli with 2 tbsp of reserved mixture
- Thread broccoli onto 8 skewers
- Brush remaining mixture over chicken
- Grill chicken on grill for 8 to 10 mins or till cooked
- Remove from grill, add broccoli adn grill for 5 mins
- Cut chicken into strips, transfer bowl with linguine
- Remove brocooli from skewers and transfer to bowl as well
- Toss well
- Serve warm at room temperature or chilled
