Chinese Food Recipe For Fried Chicken with Curry Leaves
INGREDIENTS
- oil for deep frying
- 2 chicken thighs, cut into pieces
- 2 tbsp curry leaves
MARINADE
- 1 tsp light soy sauce
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 tbsp corn flour
SAUCE
- 1/2 tbsp oyster sauce
- 1 tbsp light soy sauce
- 1 tsp sugar
- 1 tsp chicken stock powder
- 1/2 cup water

To prepare:
- Mix chicken with marinate
- Put chicken with marinate in fridge for one hour or overnight
- Deep fry in hot oil for 5 mins or till cook
- Dish up chicken and drain on paper towel
- Heat 2 tbsp oil and saute curry leaves till fragrant
- Stir in sauce
- Add in chicken and stir-fry at high heat till dry
- Dish up and serve with rice
TIP: If you cannot find fresh curry leaves, you can use dry curry leaves which can be purchased at most Indian stores.
However, fresh ones impart more flavor and aroma than the dry ones.
