Thai Recipe for Chicken Noodle Soup
INGREDIENTS FOR COOKING THAI CHICKEN NOODLE SOUP
- 250g dried egg noodles
- 1 tbsp vegetable oil
- 4 skinless, boneless chicken thighs (diced)
- 1 bunch scallions (sliced)
- 2 cm piece fresh ginger (chopped fine)
- 2 garlic cloves (chopped)
- 3 1/4 cups chicken stock
- 1/4 cup coconut milk
- dash of salt
- dash of pepper
- 1 small red bell pepper (seeded & chopped)
- 1/2 cup frozen peas
- 3 tbsp peanut butter
- 2 tbsp light soy sauce
- 3 tbsp Thai Red Curry paste
TIP: If prefer you can subsitute the dried egg noodles with another variety of noodles,
such as rice or cellophane noodles. Just prepare the noodles according to the package instructions.

To prepare:
- Cook the dried egg noodles according to package instructions or directions
- Drain then set aside
- Heat oil in a wok
- Add the chicken pieces to the wok and stir-fry till light brown (5 mins)
- Add in the white part of the scallions followed by garlic and ginger
- Stir-fry everything for 2 mins
- Slowly add in the chicken stock, coconut milk, curry paste, peanut butter and light soy sauce
- At this point, season with salt & pepper
- Bring everything to a boil, stirring frequently, then simmer for 8 mins
- Add the bell peppers, green scallion tops and frozen peas
- Boil everything for about 2 mins
- Add the egg noodles and heat through
- Spoon into warm individual bowl immediately
- If prefer, sprinkle with a few chopped green scallion
