Chinese Recipe for Grilled Chicken with Red Chilli Sauce

INGREDIENTS

  • 4 skinless, boneless chicken breasts
  • 3 red bell peppers (sliced)
  • 3 tbsp soy sauce
  • 6 scallions (sliced)
  • 4 garlic cloves (crushed)
  • 1 tbsp fresh ginger (grated)
  • 1 1/2 tsp chilli powder (add more if prefer more heat)
  • 1 tsp ground coriander
  • 1/2 tsp black pepper
  • 1/3 cup rice vinegar
  • 1/2 tsp red pepper flakes
  • 1/2 tsp salt
  • 2 tbsp sugar
  • 1 tsp sugar

To prepare:

  • Combine soy sauce, scallions, 3 garlic, ginger, chilli powder, coriander, black pepper in food processor, process till smooth
  • Transfer mixture to a plastic bag
  • Add chicken, squeeze air out of bag, seal and marinate in fridge for minimum 30 mins (or overnight for best result)
  • Grill bell peppers on broiler, remove then set aside
  • When bell peppers have cooled, process in a food processor till smooth
  • Take chicken out, grill for 8 to 10 mins or till cooked through
  • Remove chicken, set aside and keep warm
  • In a saucepan, add bell peppers puree, vinegar, red pepper flakes, 1 clove garlic and salt
  • Bring to boil over medium heat, stir in sugar and cook till sugar have dissolved and sauce is slightly syrupy (4 mins)
  • Stir in chicken with sauce on top
