Spicy Malaysian Recipe for Grilled Chicken with Spicy Peanut Sauce
INGREDIENTS
- 4 chicken breast fillets
- 6 small fresh ginger (unpeeled)
- 1/4 cup chicken broth
- 1/4 tsp red pepper flakes
- 1 tsp brown sugar
- 1 tbsp sesame oil
- 2 cloves garlic (peeled)
- 4 scallions (sliced)
- 1/3 cup peanut butter (smooth or crunchy)
- 5 tbsp soy sauce

To prepare:
- Mince ginger and garlic in food processor
- Add scallions, pulse so to become fine chop
- In a shallow dish, combine this mixture and 3 tbsp of soy sauce and oil
- Add chicken, turn to coat completely
- Cover and marinate in fridge for 20 mins to 1 hour
- In a small bowl, combine peanut butter, broth and remaining 2 tbsp soy sauce, red pepper flakes and sugar
- Set aside
- Grill chicken till done
- Serve with peanut sauce and steamed veggies of your choice
