Indian Recipe for Chicken in Coconut or Kukupaka
INGREDIENTS
- 1 whole or cut up chicken
- Juice of 1 lemon
- 1 tsp salt
- 1/2 tsp turmeric
- 1/4 tsp garlic (crushed)
- 2 to 3 oz butter
- 4 boiled potaotes
- 4 boiled eggs
Ingredients for Kukupaka Sauce
- 1/2 can coconut cream
- 1 1/2 cup water
- 1/4 cup milk
- 3 to 4 green chillies (optional)
- 1/4 tsp turmeric
- 1 small tomato (chopped fine)
- coriander leaves (garnish)

To prepare:
- In a bowl, combine the following: lemon juice, salt, turmeric and crush garlic
- Mix well then marinade the chicken in this sauce for 1 hour in refrigerator
- Remove chicken and brush with melted butter
- Brown chicken evenly under a broiler
- In another pot, mix all the ingredients for the sauce and bring to a low simmer
- Place chicken in pot over low heat and simmer in the sauce till chicken is cooked
- Add boiled potatoes and eggs to the sauce
- Garnish with coriander leaves
- Serve with steam rice or
naan bread
