Chinese Recipe for Lemon Chicken
INGREDIENTS
- 1 egg white (beaten)
- 2 tsp cornflour
- 1/4 tsp grated ginger
- 500g chicken breast fillet (cut into strips)
- 3 tbsp oil
Lemon Sauce Mix:
- 2 tsp cornflour
- 1 2/3 tsp sugar
- 2 tbsp lemon juice
- 3/4 cup chicken stock
- 2 tsp soy sauce
- 1 tsp dry sherry

To prepare:
- Mix the egg white, cornflour, ginger and a dash of salt in a bowl, add chicken & mix well
- Refrigerate for at least 30 mins
- Heat oil in a wok
- Drain chicken, discarding marinade and stif-fry till slightly brown
- Remove and keep warm
- To make the sauce: mix cornflour with 2 tbsp water (making a paste)
- Add to wok with rest of sauce ingredients
- Stir and boil for 1 min
- Add chicken, stirring to coat with sauce
- Serve with rice
