Chinese Recipe for Lemon Chicken

INGREDIENTS

  • 1 egg white (beaten)
  • 2 tsp cornflour
  • 1/4 tsp grated ginger
  • 500g chicken breast fillet (cut into strips)
  • 3 tbsp oil

    Lemon Sauce Mix:
  • 2 tsp cornflour
  • 1 2/3 tsp sugar
  • 2 tbsp lemon juice
  • 3/4 cup chicken stock
  • 2 tsp soy sauce
  • 1 tsp dry sherry

To prepare:

  • Mix the egg white, cornflour, ginger and a dash of salt in a bowl, add chicken & mix well
  • Refrigerate for at least 30 mins
  • Heat oil in a wok
  • Drain chicken, discarding marinade and stif-fry till slightly brown
  • Remove and keep warm
  • To make the sauce: mix cornflour with 2 tbsp water (making a paste)
  • Add to wok with rest of sauce ingredients
  • Stir and boil for 1 min
  • Add chicken, stirring to coat with sauce
  • Serve with rice
