Malaysian Recipe for Malay Fried Rice or Nasi Goreng
INGREDIENTS FOR MALAY FRIED RICE OR NASI GORENG
- 500g cooked rice (cooled)
- 3/4 cup vegetable oil
- 2 small carrots (diced)
- 125g prawns (shelled & deveined)
- 125g chicken (cooked & diced)
- 250g long beans (diced)
- dash of salt
- dash of pepper
- omelette (made from 2 eggs, rolled up & shredded)
- 60g daun sup or celery
- 125g lettuce (shredded)
- 2 tbsp shallot flakes (fried)
Ingredients to be pounded
- 2 cloves garlic
- 5 shallots
- 3 red chillies
- 1 inch piece belachan (dry-roasted)

If you prefer, you can certainly make this dish into a vegetarian dish by eliminating the prawns and
chicken. Use tofu instead.

can be found at most hawkers store and is a great way to use leftover rice.

To prepare:
- Heat oil in wok
- Add in the pounded ingredients: garlic, shallots, chillies and belachan
- Stir-fry till fragrant (3 mins) then add in the carrots and prawns
- Fry for 5 more mins then add in the chicken and beans
- Season to taste with salt and pepper
- Stir-fry everything till the ingredients are cooked
- Reduce the heat to low
- Add in the rice and toss the mixture together for 5 mins
- Remove from the flame and dish up on a serving platter
- Garnish with shredded omelette, celery, lettuce and shallot flakes
- Serve hot or warm with a side or fresh chopped chillies
