Chinese Pineapple Chicken
INGREDIENTS
- 1 piece of chicken breast (sliced)
- 1 can of pineapple rings
- 150g fresh pineapple (diced) - optional, you can also use the cans instead
- 1 green capsicum (sliced)
- 1 tomato (sliced into wedges)
- corn flour to coat chicken
- enough oil for deep frying
MARINADE
- 1 tsp salt
- 1/2 tsp sugar
- 1 egg
- 1 tsp curry powder
- 1 tbsp corn flour
SAUCE
- 1 tbsp Thai Chilli Sauce
- 1 tbsp tomato sauce
- 1 tbsp chilli sauce
- 3 tbsp canned pineapple juice
- 1 tsp lemon juice
- 1 tbsp sugar
- 1/2 tsp salt

To prepare:
- Combine breast with marinade
- Season for at least 30 minutes in refrigerator
- Coat with corn flour
- Deep fry chicken in hot oil till golden brown
- Dish and drain
- Leave 1 tbsp oil in wok, put in pineapple, capsicum, tomato and stir well
- Pour in sauce and cook till thicken
- Add in fried chicken breast
- Stir well and dish up
TIP: Use boneless chicken thighs if prefer. I enjoy the flavor of Thai Chill Sauce in this dish but if you can't find
it, use chilli powder.
