Chinese Pineapple Chicken

INGREDIENTS

  • 1 piece of chicken breast (sliced)
  • 1 can of pineapple rings
  • 150g fresh pineapple (diced) - optional, you can also use the cans instead
  • 1 green capsicum (sliced)
  • 1 tomato (sliced into wedges)
  • corn flour to coat chicken
  • enough oil for deep frying

MARINADE

  • 1 tsp salt
  • 1/2 tsp sugar
  • 1 egg
  • 1 tsp curry powder
  • 1 tbsp corn flour

SAUCE

  • 1 tbsp Thai Chilli Sauce
  • 1 tbsp tomato sauce
  • 1 tbsp chilli sauce
  • 3 tbsp canned pineapple juice
  • 1 tsp lemon juice
  • 1 tbsp sugar
  • 1/2 tsp salt
To prepare:

  • Combine breast with marinade
  • Season for at least 30 minutes in refrigerator
  • Coat with corn flour
  • Deep fry chicken in hot oil till golden brown
  • Dish and drain
  • Leave 1 tbsp oil in wok, put in pineapple, capsicum, tomato and stir well
  • Pour in sauce and cook till thicken
  • Add in fried chicken breast
  • Stir well and dish up
TIP: Use boneless chicken thighs if prefer. I enjoy the flavor of Thai Chill Sauce in this dish but if you can't find it, use chilli powder.
