Chinese Stir Fry Chicken with Noodles
INGREDIENTS
- 2 chicken breasts or thighs (sliced)
- 3 dried mushrooms (soaked and sliced)
- 1 packet of yellow noodles (parboiled and drained)
- 1 egg beaten (fried then sliced very thinly)
- 1 scallion (chopped)
- 2 cloves garlic (chopped finely)
- 2 shallots (chopped finely)
- 1/2 lbs bean sprouts (optional)
- 1 lbs choi sum (or vegetable of your choice)
- 2 tbsp oil

To prepare:
- Heat oil in wok
- Add shallots and garlic, then mushrooms
- Add in chicken and cook until done
- Set aside
- Add in noodles and stir fry for at least 5 minutes
- Add in vegetables and continue to stir fry for another 1 minute
- Add in cooked chicken and mushrooms
- Add in bean sprouts and cook for another 1 minute
- Remove noodles and place on plate
- Sprinkle sliced eggs and chopped scallions
- Serve immediately with a dish of cut chillies on the side
