Chinese Stir Fry Chicken with Noodles

INGREDIENTS

  • 2 chicken breasts or thighs (sliced)
  • 3 dried mushrooms (soaked and sliced)
  • 1 packet of yellow noodles (parboiled and drained)
  • 1 egg beaten (fried then sliced very thinly)
  • 1 scallion (chopped)
  • 2 cloves garlic (chopped finely)
  • 2 shallots (chopped finely)
  • 1/2 lbs bean sprouts (optional)
  • 1 lbs choi sum (or vegetable of your choice)
  • 2 tbsp oil

To prepare:

  • Heat oil in wok
  • Add shallots and garlic, then mushrooms
  • Add in chicken and cook until done
  • Set aside
  • Add in noodles and stir fry for at least 5 minutes
  • Add in vegetables and continue to stir fry for another 1 minute
  • Add in cooked chicken and mushrooms
  • Add in bean sprouts and cook for another 1 minute
  • Remove noodles and place on plate
  • Sprinkle sliced eggs and chopped scallions
  • Serve immediately with a dish of cut chillies on the side
