Spicy Thai Chicken Skewers
INGREDIENTS FOR COOKING THAI CHICKEN SKEWERS
- 2 lbs ground chicken
- 1 tbsp coriander powder
- 1 tbsp cumin
- 1 medium sized onion (finely chopped)
- 1 clove garlic (finely chopped)
- 1 bunch coriander leaves
- salt and pepper to taste
- 1 egg beaten
- 4 stalks lemongrass
- 1 lime, cut into wedges for garnish
TIP: If you are unable to find fresh lemongrass, subsitute using 1 tbsp of lemongrass powder. Get four wooden
skewers in place. You can control how spicy this dish is by moderating the spices used.

To prepare:
- In a bowl, mix well all ingredients (except lemongrass) and leave in refrigerator for at least an hour
- If you are not using fresh lemongrass stalks, add in the lemongrass powder with mixed ingredients
- Wash and pat dry lemongrass stalks
- Get bowl from fridge and form four balls of the mixture
- Add one mixture to a stalk, forming it so it wraps the stalk nicely
- The stalks act like skewers for the meat and imparts a lovely flavor
- Do the same for all four stalks
- Place on plate and refrigerate for another hour
- Heat grill oven and cook for about 15 mins or until browned
- Serve on a plate with cut lime wedges
