Thai Recipe for Peanut Chicken
INGREDIENTS FOR COOKING THAI PEANUT CHICKEN
- 12 chicken drumstick (skin removed)
- 1 1/4 cup salted peanuts
- 3/4 cup all-purpose flour
- 1 lemongrass stem (outer leaves removed, chopped)
- 2 eggs
- 4 tbsp milk
- 2 garlic cloves (crushed)
- 2.5cm piece fresh gingerroot (grate fine)
- 2 tbsp cilantro leaves (chopped)
- vegetable oil
Dipping Sauce for Peanut Chicken
- 2 garlic cloves (crushed)
- 2 tbsp brown sugar
- 1/2 cup white wine vinegar
- 1 fresh red chilli (seeded & chopped fine)

To prepare:
- Preheat oven to moderate to high heat
- In a food processor, process the garlic, lemongrass, ginger, cilantro leaves, peanuts and 2 tbsp
of flour
- Process till finely ground
- Transfer to a shallow plate
- In a bowl, whisk the egg and milk together
- Spread the remaining flour onto a plate
- Prepare a oiled roasting pan
- Take 1 drumstick, dip into the flour, then the egg mixture and then onto the peanut mixture
- Arrange the drumstick on the roasting pan
- Repeat till all the drumsticks are done
- Bake in the preheated oven for 15 mins, turn them once then bake for extra 15 mins
- Pour off any excess oil and cook drumsticks for another 5 mins or till crisp
- When done, remove chicken and drain excess oil on paper towels
- Serve with sauce
- How to make dipping sauce: Using a mortar and pestle, grind the chilli and garlic to a paste
- Set aside
- Using a pot, pour in the vinegar and sugar and heat gently till sugar dissolves
- Bring to a boil and simmer for 2 mins
- Stir in the galric-chilli paste
- Transfer everything to a bowl and serve with chicken
