Vietnamese Recipe for Chicken Salad
INGREDIENTS
- 4 chicken thigh fillets (cooked & sliced)
- 1 packet shredded carrots
- 1 celery stick (sliced)
- approx. 1 cup of shredded cabbage
- 1 small red onion (sliced thinly)
- 1 bunch coriander leaves
- 1 bunch fresh mint leaves
For the Dressing:
- 2 tbsp white vinegar
- 3 cloves garlic (chopped fine)
- 3 tbsp sweet chilli sauce
- 1 tbsp fish sauce
Topping:
- 1 tbsp brown sugar
- 2 cloves garlic (chopped fine)
- 2 tbsp oil
- 1/2 cup roasted unsalted peanuts (chopped fine)
TIP: You can make this salad at least several hours before serving. Just before you serve to the guess, add the topping.

To prepare:
- Mix the chicken with celery, carrot, onion, cabbage, coriander plus mint in a big bowl
- Dressing: Put chilli & fish sauce, garlic, vinegar and 2 tbsp water in bowl and mix
- Make sure you mix well
- Pour dressing over chickcen and toast to coat well
- Place on serving plate
- Topping: Heat oil (use peanut oil if prefer) in wok
- Add garlic, cook till slightly brown
- Add sugar and cook till sugar dissolves
- Just before serving, sprinkle the topping on salad
