Vietnamese Recipe for Honey Roasted Chicken or Ca Quay Mat Ong
INGREDIENTS FOR HONEY ROASTED CHICKEN
- 1 large whol chicken
Ingredients for Marinade I
- 2 tsp sesame oil
- 2 tbsp sugar
- 2 tsp salt
- 2 tsp pepper
Ingredients for Marinade II
- 3 tbsp honey
- 2 tbsp sweet soy sauce
- 1 tbsp lime juice
- 1 tbsp annatto seed oil (see below)
- 1 tsp sesame oil
TIP: To make the annatto seeds oil, saute the seeds in oil first. Cook till the oil
turns a light reddish color, then strain and discard the seeds.
What is annatto seed? Also known as Roucou, common in Mexican and Latin market. Known as
atsuwete or achuete in the Phillipines, the seeds are brick red, triangular. No subsitution.

This is an excellent dish to make instead of the traditional roast chicken. Serve this dish with rice and cucumber
slices on the side.

To prepare:
- Wash chicken well, cleaning the inside and discarding any fat
- In a bowl, combine the ingredients for Marinade I
- Rub the marinade sauce all over the chicken, don't forget the inside and outside
- Close the chicken cavity with a needle or bamboo stick
- Leave chicken to marinade for at least 1 hour
- Set chicken on a baking pan
- In a bowl, combine the ingredients for Marinade II
- Pour 1/2 mixture over chicken
- Preheat oven to medium heat
- Place chicken in centre rack and keep basting chicken every 10 to 15 mins with marinade sauce
- Bake till the skin becomes golden brown and chicken is well cooked
- Cut up the chicken and serve on a platter
TIP: The secret to making this chicken is to constantly baste the chicken with a basting
spoon. Since it does take time to make this dish, make sure you do it several hours in advance. Any type
of fowl or game bird will work with this recipe.
