Chicken Teriyaki (Torino-teriyaki)
INGREDIENTS
- 500g chicken - cut into strips
- 1/4 cup dark soy sauce
- 1/4 cup sake wine
- 2 tablespoons mirin wine
- 1 tablespoon white sugar
- 1/4 cup sake wine
- 2 tablespoons mirin wine
- 1 tablespoon white sugar
- Toasted sesame seeds
FYI: The word, teriyaki is a combination of two Japanese words "teri" or luster and "yaki" meaning to grill or broil.

To prepare:
- Combine soy sauce, sake, mirin and sugar in a small saucepan over medium heat and stir until sugar is dissolved
- Remove from heat and let cool
- Marinade chicken pieces using the sauce, leave overnight or at least an hour
- Grill or broil until chicken pieces are cooked
- Sprinkle toasted sesame seeds before serving
- Can be served with rice or noodles
TIP: Chicken meat can be subsituted with beef, pork or any fish. For a vegetarian dish, pour sauce over vegetables of your choice and grill.
