Vegetarian Thai Cucumber Salad with Peanuts and Chilli
INGREDIENTS
- 3 medium cucumbers
- 2 tbsp white vinegar
- 2 tsp white sugar
- 1-2 tbsp chilli sauce
- 1/2 red onion (chopped)
- 1/2 cup roasted unsalted peanuts (chopped)
- 2 tbsp crisp fried garlic
- 1/2 tsp red chilli (chopped)
- 1 tbsp fish sauce

To prepare:
- Cut cucumber in half lengthways.
- Remove seeds with a teaspoon and slice cucumber thinly.
- Combine white vinegar and sugar and stir until sugar has dissolved.
- Transfer the mixture to a large bowl and stir in cucumber, chilli sauce, red onion and coriander leaves.
- Allow to marinate for about 45 minutes.
- Just before serving, toss through the peanuts, garlic, red chilli and fish sauce.
TIPS: Crisp fried garlic can be bought in any local Asian food store. You can also make you own by finely slicing a few garlic cloves and cooking them in oil till crisp and golden brown. Be careful not to burn them. Drain and season with salt just before serving. This is a delicious vegetarian thai dish, though it does have fish sauce. If you don't eat fish as you're purely a vegetarian then this dish may not be appropriate for you.
