Vegetarian Thai Cucumber Salad with Peanuts and Chilli

INGREDIENTS

  • 3 medium cucumbers
  • 2 tbsp white vinegar
  • 2 tsp white sugar
  • 1-2 tbsp chilli sauce
  • 1/2 red onion (chopped)
  • 1/2 cup roasted unsalted peanuts (chopped)
  • 2 tbsp crisp fried garlic
  • 1/2 tsp red chilli (chopped)
  • 1 tbsp fish sauce

To prepare:

  • Cut cucumber in half lengthways.
  • Remove seeds with a teaspoon and slice cucumber thinly.
  • Combine white vinegar and sugar and stir until sugar has dissolved.
  • Transfer the mixture to a large bowl and stir in cucumber, chilli sauce, red onion and coriander leaves.
  • Allow to marinate for about 45 minutes.
  • Just before serving, toss through the peanuts, garlic, red chilli and fish sauce.
TIPS: Crisp fried garlic can be bought in any local Asian food store. You can also make you own by finely slicing a few garlic cloves and cooking them in oil till crisp and golden brown. Be careful not to burn them. Drain and season with salt just before serving. This is a delicious vegetarian thai dish, though it does have fish sauce. If you don't eat fish as you're purely a vegetarian then this dish may not be appropriate for you.
