Indian Stuffed Cucumbers Free Vegetarian Cooking Recipes
INGREDIENTS
- 18 pieces (2'' long) of cucumber
- 4 tbs oil
Ingredients for filling
- 1/2 cup coriander leaves - chopped
- 1/2 cup coconut - grated
- 1/2 cup moong dal - cooked & crushed
- 1/2 tbs green chilli-ginger paste
- 1 tsp red chilli powder
- Salt to taste
- 1/4 tsp turmeric powder
- 1 tsp dry mango powder or raw mango grated
- 1 teaspoon sugar

To prepare:
- Cut cucumbers havles, slicing vertically
- Make one slit lengthwise for stuffing
- Mix all ingredients for filling
- Scop a spoonful of the ingredients and place it in a cucumber piece
- Continue until there is no filling left
- Heat oil in a deep wok
- Add cucumber pieces one at a time
- Cover and cook on medium heat till cucumber is cooked but
tender and crisp
- Do not overcook
- Serve as a side dish
TIP: For this dish, you may also like to try using khira, which is a type of northern Indian cucumber that is generally pale green, long and ridged.
