Thai Recipe for Bananas in Coconut Milk

INGREDIENTS

  • 4 large bananas (peeled & cut into chunks)
  • 1 1/2 cups coconut milk
  • dash of salt
  • 2 tbsp superfine sugar
  • 1 tsp orange flower water
  • 2 tbsp mung beans (cooked)
  • 1 tbsp fresh mint (shredded) - leave extra for garnish

To prepare:

  • Place the mung beans into a pan
  • Cook mung beans over high heat till they turn crisp and brown
  • Shake pan occasionally so they don't burn
  • Once beans have cooled slightly, crush light with mortar and pestle
  • Set aside
  • Put the cut bananas into a large pan
  • Add in the coconut milk, sugar and salt
  • Heat gently till boiling
  • Simmer for at least 1 min
  • Remove pan from heat
  • Sprinkle orange flower water over banana mixture
  • Stir in the chopped fresh mint and spoon into a serving dish
  • Sprinkle toasted mung beans over bananas
  • Serve this dish warm with extra fresh mint for garnish
