Malaysian Recipe for Barley Drink (Ee Bee Chui)

INGREDIENTS

  • 200g barley pearls
  • 100g sugar
  • 50g rock sugar
  • 100g candied winter melon
  • 2 litres water
  • 2 pandan leaves (knotted)

TIP: This popular drink can either be served warm or chilled.

To prepare:

  • Using a medium pot, bring all the ingredients to boil
  • Lower the heat then simmer for at least 20 mins
  • Cool slightly before straining
  • Discard pandan leaves
  • Serve in a clear glass with the pearls at the bottom and a straw

TIP: Be careful about overboiling as overboiling will result in the mixture becoming thick and starchy.
